One of our favorite grocers is Cookbook in Echo Park.  It can be a little a lot! spendy, but it feels totally worth it because they have the best local meats, cheeses, veggies.. and it’s run by a super sweet and helpful couple. 

They had a write up in the NYT’s Edible Selby a couple months ago, where they gave the recipe for Beans + Greens.  I even used Rancho Gordo Good Mother Stallard Beans from their store.. and I am a total convert.  Best beans I ever had. 

Beans + Greens

Kale, good mother stallard beans, red onions.

Cook your beans with onion, garlic and thyme.  Pickle your red onions with red wine vinegar.  Brush each leaf of kale with olive oil and grill on each side for 30-45 seconds.  Chop kale, mix with beans and onions.
